Grilled Tofu and Vegetable Yakitori Skewers

Ingredients:

    • 1 block of firm tofu, drained and pressed
    • 1 red bell pepper
    • 1 yellow bell pepper
    • 1 zucchini
    • 1 red onion
    • 8-10 cherry tomatoes
    • Wooden or metal skewers

    • 1/4 cup soy sauce or tamari
    • 2 tablespoons sesame oil
    • 2 tablespoons rice vinegar
    • 1 tablespoon maple syrup or agave nectar
    • 2 cloves garlic, minced
    • 1 teaspoon grated fresh ginger
    • 1 tablespoon sesame seeds (optional)
    • 2 tablespoons chopped fresh cilantro (optional)

Instructions

1. Prepare the Tofu and Vegetables

Start by draining and pressing the tofu to remove excess moisture. Cut the tofu into 1-inch cubes. This size ensures they grill evenly and stay intact on the skewers.

Next, wash and chop the vegetables. Cut the bell peppers into 1-inch pieces, slice the zucchini into half-inch rounds, and cut the red onion into similar-sized chunks. Keep the cherry tomatoes whole.
